Well, placing a RED wine in the fridge is liable to make me cringe and wince for days. Never, ever do that. You'll absolutely ruin the flavour and be left with a bottle of soured grape squeezings. It's fine with a white, though.
Although I've always found cooking with wine to be overrated, and really just a way to use cheap wines no one wants to actually drink.
